Perfect Mini Astro Wife Chocolate Cookies (or Cape Cookies, aka Tiny Tiny Chocolate Chip Cookies)

2 ¼ cups flour
1 teaspoon baking soda
1 ¼ teaspoon salt
2 sticks unsalted butter, softened
½ cup sugar
1 packed cup dark brown sugar
1 teaspoon vanilla extract
2 large eggs at room temperature
8 cups (4 12-ounce packages) chocolate chips

1. Preheat oven to 375 ºF.
2. Sift flour, soda and salt together.
3. Mix butter, both sugars, and vanilla until light and creamy. Add eggs and continue to mix until light and fluffy.
4. Stir in and evenly distribute the chips.
5. Using a fork or two knives, form tiny cookies containing just 2–4 chips each. Place about 3/4 inch apart on parchment-lined cookie sheets and bake until done, about 8 minutes. Should be golden. Cool on racks. Once completely cooled, cookies can be stored in airtight containers for up to a month and frozen for much longer.
